Ingredients:
1/2 Small head of cauliflower

So I really like potatoes, pasta, bread - really any carb. But not being as active as I used to be I need to enjoy these more in moderation. Using cauliflower to replace carbs - I know this is very trendy right now but I totally love it. So for this recipe we are substituting cauliflower for potatoes and making cauliflower hash browns. Start by chopping the cauliflower finely (top left). Finely dice the yellow onion. Add the egg. Sprinkle the salt + pepper + cayenne (top right). Mix thoroughly. I like to do this all the night before and let the mixture set overnight, if not overnight at least 20 minutes. Cover the bottom of a nonstick pan with vegetable oil and add a pat of butter and set to medium heat. I like using this mixture for the oil's smoke point and the butter's flavor. Use a 1/4 cup measuring cup and scoop out portions (bottom left). Cook about 4-5 minutes per side until golden brown (bottom right). Drain on a paper towel and sprinkle with salt while still warm.
