Quinoa:
-1 cup of quinoa
-2 cups of vegetable stock
-1 clove of garlic
-Salt + pepper
Burgers:
-1 cup of prepared quinoa
-1 egg
-2 tbsp flour
-1 small sweet potato
-1/4 cup black beans
-2 tsp onion powder
-1 tsp cayenne
-1/t tsp cumin
-Salt + pepper
-1 cup of quinoa

Burgers:

Quinoa:
In a fine mesh colander rinse the quinoa under cold water, this takes the bitter note away. Combine the rinsed quinoa with the stock and grate in the garlic. Season with a pinch of salt and pepper and stir well. Bring the quinoa up to a boil. Once boiling turn the heat down to low and cover with a lid. Let the quinoa cook for 30 minutes without lifting the lid, DO NOT LIFT THE LID. At thirty minutes you can remove the lid and give it a fluff with a fork. If there is still water in the pan continue on low until the excess moisture is gone.

Start by poking the sweet potato with a fork and microwaving for 5 minutes, or until tender. You can also do this in the oven but for one potato I think the microwave is easier. Once tender mash the potato until mostly smooth. Add this to a bowl with the egg and spices and mix well. Partially mash the black beans, I like some texture to mine still. Mix the beans into the quinoa and then add the potato mixture to that. Mix until well combined. I cook mine in a cast iron skillet but feel free to bake them or use a non-stick pan. I would stay away from the grill though as these are tightly formed and could fall apart. I use a 1/4 cup scoop, makes 4, to portion these into patties and fry until golden brown and heated through.
